What came after the 1303 siege of Chittorgarh?

Quick answer

Chittor was attacked again in 1535 and fell to Akbar in 1568. The fort remained the memory of Mewar even after the capital moved.

The sack of Chittor in 1303 is a historical event. Later writing describes jauhar during the great sieges. Those descriptions are not all of the same age, and they are not a film script.

Say 1303 for Khalji, and say that Padmavat is literature. Do not quote the poem as an eyewitness.
