What is Dal Baati Churma?

Dal baati churma is a classic Rajasthani meal: a mixed-lentil dal, hard wheat rolls called baati that are baked and soaked with ghee, and a sweet crumbled wheat called churma.

Detailed answer

Baati is unleavened wheat dough shaped into balls and traditionally baked in embers or a hot oven until the crust is firm. At the table it is broken open and flooded with ghee. The dal served with it is often a blend of lentils, in the same family as panchmel dal, tempered with spices.

Churma is the sweet part. Coarse wheat, ghee and jaggery or sugar are crumbled together, sometimes with cardamom or nuts. A full plate is heavy. It is festival and wedding food as much as everyday food, and it is especially associated with Marwar, though you will find it across the state.

There is no single licensed recipe. Homes and restaurants vary the lentils, the heat and how sweet the churma is. A home-style version in this library can be scaled, and it is labelled as a method, not the only authentic one.

  • In Jodhpur and other Marwar towns, ask for dal baati as a thali rather than as a side.
  • Vegetarians can eat the classic plate. Ask before assuming a kitchen’s dal is cooked without onion or garlic if that matters to you.
