Jodhpur is known for mirchi vada, makhaniya lassi, pyaaz kachori in the Marwar style, and the full dal baati churma meal. The old city around the clock tower is where many people start.

Detailed answer

Mirchi vada is a large green chilli stuffed, battered and fried. Makhaniya lassi is thick, often salty-savoury rather than the sweet lassi people expect, and served very cold. Both are everyday Jodhpur foods, not only tourist performances.

Marwari cooking also uses ker sangri, gatte and bajra. Meat eaters will find dishes such as laal maas on many menus; say how hot you want it, because Mathania chilli is not decorative.

Street snacks are filling. Eat the first round slowly if you have a fort to climb afterwards. Mehrangarh is a real walk.

  • Ask whether the lassi is salted or sweet before you order a large glass.
  • If a queue is mostly local at lunch, that is a better signal than a rooftop photograph.
